Feeling inspired last week, we decided to try out one of Big Green Egg‘s Easter recipes – Hot Cross Bun Bread & Butter Pudding. Replacing traditional slices of bread for hot cross buns, this recipe leans towards zesty, fruity flavours. Enjoy BBQ’d buns with crisp, toasted tops and stodgy, custard-soaked bottoms this Easter.

Step 1: Preparing the buns

Ingredients:

Hot cross buns (8)

Butter

Marmalade

Egg yolks (5, large)

Caster sugar 125g

Whole milk 750ml

1 lemon, zested

1 orange, zested

To begin, butter your baking dish, tray or skillet. Slice your hot cross buns into two halves (like a hamburger bun). Give each half a good spread of butter and a dollop of marmalade, then arrange the lower halves in your baking dish.

With the buns arranged, cover the dish and put it to one side. We’ll be back for our buns after Step 2…


Step 2: Preparing the custard

With the buns arranged, it’s time to prepare our custard. Begin by separating 5 egg yolks and add them to the pan. Then, add the 125g of caster sugar and combine thoroughly.

Once the yolks and sugar have come together, begin adding the milk. Make sure to keep stirring everything together as the milk goes in.

Finally, grate the zest of one orange and one lemon into the custard mix. If you manage to get more zest in the custard than stuck in the grater – congratulations, you’re doing better than I was at this stage!

Step 3: Final assembly & cooking

Our first layer of halved hot cross buns are in the tray and our custard is prepared – let’s get this dessert ready for the grill. It’s as simple as adding the tops to our hot cross buns and pouring our custard into the tray. This can be covered over and left in the fridge if needed.

With our dessert fully assembled, it’s finally time to get it onto the grill! We’ll be cooking this dessert at 200°C for 35 minutes. Place the tray on a baking stone, and put the stone directly atop your grill’s stainless steel grid. Once the custard has set and your pudding is firm to the touch, you’re good to go! Get your pudding off the grill and dig in.
