

As tempting as it is to dive straight in, our meat needs time to rest. Resting allows juices in the meat to redistribute, rather than trickling away when we carve. We took our pork shoulder inside to rest for 30-40 minutes, wrapped it with foil and placed a tea towel over the top to help retain heat.
